GORGEOUS GUACAMOLE



It's Fajita night at MattyB Towers tonight. What better way to use leftover chili from earlier in the
week then getting your fajitas out, whipping some delicious sides and creating some yummy finger food for the weekend. A great way to get stuck in with friends or family before the weekends festivities begin. Every fajita needs guacamole! These are the rules! But don't be buying shop bought stuff. No no no! Grab some avocado on the way home and you can make my beautiful fresh version in less than ten minutes.

Gorgeous Guacamole

1 Finely Diced Red Onion
2 Finely Diced Chili's (With Seeds)
1 Chopped Garlic Clove
Pinch Salt
2 Ripe Avocados
1 Tbsp Lime Juice
3 Cherry Tomatoes (Chopped and Deseeded)
 A Handful Chopped Coriander
Crushed Black Pepper To Season
  1. Take half of the red onions, half the chili's and the garlic clove and chuck into a bowl. Add a pinch of salt.
  2. Take 1 avocado, half and destone and scoop out the soft flesh before adding to the bowl.
  3. Blend all the ingredients together into a smooth paste.
  4. Add the rest of the onion, chili, avocado along with the tomatoes, coriander and a pinch of pepper. Mix everything together with a fork until well combined, breaking up the avocado with the fork but still leaving some hearty chunks. 
  5. Taste, add more lime juice, seasoning or coriander if needed to suit your taste.
  6. Transfer to a serving bowl and sprinkle with some more black pepper
Take some creme fraiche, warmed tortillas, your scrummy guacamole and if you have time make some fresh tomato salsa too and you have the makings for a Mexican feast. Remember to squeeze your avocados before buying too. For them to be ripe they should be squishy soft on the bottom. Another little tip for leftover guacamole is to keep one of the stones and place it in the guacamole before keeping in the fridge. I don't know why but this will prevent it from discolouring and going nasty. Versatile, quick and of course delicious! What more can you want from a gorgeous guacamole.

  1. Interesting! I didn't know that tip about putting one of the stones to keep it from turning brown. I'll try it the next time I have some guacamole.
